A seasoned mixture that consist of a variety of seasonings such as coarse himalayan pink salt and brown salt, bay leaves, mace, peppercorns, sage, allspice, thyme, garlic, cardamom, coriander, anise star, fennel seeds, cumin, cinnamon, cloves and other selected spices and herbs.
The process of “brining” or soaking food in a liquid solution consisting of water, salt, enhanced with herbs and spices is a method often used to tenderize and flavor various protein cuts for roasting such as turkey, chicken, leg of lamb.
Directions: For every 2 cups of water add 1 tablespoon of brine and 1 bayleaf. Bring to a light boil, cool down, add your protein. For example: usually 8 cups covers a whole chicken to brine. Therefore use 4 tablespoons of the spice mix and 4 bay leaves.
